Pork Bistek

This recipe is dear to me because it reminds me a lot of my University days. One of my favorite dish and a little tweak from the popular Adobo (for which I realised I haven't written about yet!)

Bistek dish is like a slang Filipino word for "steak" and it is said to be a local adaptation of a Spanish dish called bistec, which is a beef dish cooked in onions.  

Ingredients:
400 grams lean pork chops
1/2 cup lime or lemon juice
1/4 cup soy sauce
1 large onion - peeled and sliced thinly for sauteeing
3 heads of garlic - peeled and minced
1/4 teaspoon pepper
Vegetable oil
1 cup of water
salt and pepper to taste
1 big red onion, peeled and sliced into rings

Procedures:
1. Make a marinade - combine soy sauce, lime or lemon juice, onions, garlic and pepper
2. Soak the pork chops to the marinade for about 1 hour. Afterwards, drain the meat, the onions and the garlic, reserving the marinade
3. In a medium pan, add lil bit of vegetable oil and sear the marinated pork chops until lightly browned. Spoon out released juices out of the meat while searing. Remove the meat from the pan and set aside
4. In the same pan, add lil bit of vegetable oil and sautee the reserved onions and garlic from the marinade
5. Add the cooked pork chops in the pan, after about 2 minutes, pour the reserved marinade and water, then wait til it boils
6. Season with salt and pepper to taste
7. Turn off heat and add the onion rings. Cover the pan so that the steam will slightly cook the onion rings.
8. Serve while hot. Serve with steamed white rice
