Brownies (with a cheat!)

Brownies (with a cheat!)

Yes, this one is made out of the bought packet from the store - saves a lot of time and taste equally great! However, if you're craving for dark chocolate theme brownies, this might not be the one for you. I will upload a dark chocolate brownies recipe separately in due time.

I like my brownies with nuts because that's how I have it back home. Peanut is usually what's in it, though I find cashew nuts from Costco does the job very well too.

Ingredients:
Cadburry brownie mix - 1 box
Handful of cashew nuts
1 medium-sized egg
75 ml vegetable oil
75 ml water
8x8 brownie tray - could be any other baking tray, just make sure it's not too thick for the brownie to cook properly

Procedures:
1. Preheat oven to 190 degrees (170 fan) gas mark 5
2. Grease brownie tray and layer with baking paper
3. Prepare the nuts. Break into smaller pieces, not to small though - see pictures below for reference. Put the nuts in the prepared baking tray
3. In a mixing bowl, mix together oil, water and egg. Add the brownie mix and whisk until fully combined
4. Pour the mixture to the prepared brownie tray with nuts and bake for 25 minutes or until crisp on top but with moist chocolatey centre. You can check if ready by inserting a toothpick. If it comes out clean, then it's ready
5. Remove from oven and allow to cool in the tin. I know it's tempting but resting it to cool is important, otherwise, the structure of the brownie will be ruined - Yep, did it and I'll never do that again. Once cool enough, cut into 16 portions.

Salted cashew nuts from Costco - it makes the brownies more interesting with added texture and bit saltiness in it
Sorry Betty Crocker, I just made a choice :-(
The batter consistency should look like this
I tried adding pistachio nuts just because. It's ok but I prefer cashew nuts.
