Ginisang giniling na baboy

The power of sauté /ˈsəʊteɪ/!
Did you know that most Filipino dish starts by sauteing?
This dish literally means sauteed minced pork - and yes that's a dish ^^
I like this dish because it is very simple and easy to make. I prefer my version to be on a very light sauce so I don't put banana ketchup or tomato paste. I'm using real tomatoes in sauteing instead to achieve a fresh savoury taste

Ingredients:
400 grams minced pork - I used 10% fat but any will do
5 pieces of cherry tomatoes
1 medium-sized potato, peeled and chopped into very small pieces
1 small green bell pepper and 1 small red bell pepper
1 medium-sized carrot, peeled and chopped into very small pieces
1/4 cup raisins
1 large onion, peeled and minced
4 cloves of garlic, peeled and minced
10 boiled Quail eggs - if available
1/4 cup of green peas (can do without)
Cooking oil
Fish sauce
1/2 cup of water
Salt and pepper to taste

Procedures:
1. In a large pan over medium heat, sauté onion, garlic and cherry tomatoes
2. Add ground pork and cook for about 5 minutes or until the minced pork turn from pinkish to greyish
3. Add water and fish sauce - 1 teaspoon for now, wait to boil. Simmer until meat is tender and fully cooked. Probably about 15 to 20 minutes
4. Add chopped potatoes, carrots, bell peppers, raisins and green peas. Allow to cook for 5 minutes or until the water is significantly reduced - see photos
5. Season with salt and pepper to taste.

I chopped my veggies this small for it to go well with minced pork. I also chopped my onions and garlic about this size to blend with the dish.
